500 ml of water

1.Clean eggplant and cut into half-rings. Clean and grind the garlic and onion. With sprigs of thyme, only the leaves.
2. In a pan heat olive oil over medium heat. Throw the eggplant, thyme and vinegar. Mix and add some more olive oil.
3. In a saucepan fry the onion and garlic until soft, add fried eggplant, pour the water and bring to a boil. Cook for 20 minutes.
4. The contents of the pan, beat in a blender to puree. If necessary, add a little water and season.
5. Pour ready soup bowls, decorate with thyme and serve.
